Flourless Peanut Butter Cookies

Ingredients

  • 1 cup natural peanut butter
  • 1 cup sugar
  • 1 large egg, lightly beaten
  • 1 teaspoon vanilla extract
  • Coarse sea salt

Directions

Preheat the oven to 350 degrees F and place racks in the upper and lower third of the oven.

In a medium bowl, mix the peanut butter, sugar, egg and vanilla until well combined. Spoon 1 tablespoon of mixture about 1 inch apart onto ungreased baking sheets. Flatten the mounds with the tines of a fork, making a crosshatch pattern on the cookies. Sprinkle coarse salt on top of the cookies.

Bake until golden around edges, about 10 minutes, switching the position of the pans halfway thorough baking. Transfer to racks to cool. Repeat with the remaining dough.

What Makes This Recipe Really Sing: Without the flour getting in the way, you really get that true peanut butter flavor.

BYOC: Try tossing in mini versions of stuff. I love peanut butter chips, mini chocolate chips, shredded coconut and even a mini peanut butter cup. Try making a thumb print cookie and add jelly to it. Go crazy, kids and adults love these.

Chocolate Chip Lava Cookies

  • 1/2 cup (1 stick) butter, softened
  • 1/2 cup light brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/2 tablespoon vanilla extract
  • 1 3/4 cups (210 grams) all purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 (11.5 oz) bag milk chocolate chips

Recipes - Week 2 - Pt 3Chicken, Broccolini Casserole  •    4 boneless chicken breasts (chopped into 1in pieces) •    2 cups chopped broccolini •    6-7 tbs pesto (see prev post for recipe) •    1/4 cup extra virgin olive oil •    1 cup grated mozzarella & provolone cheeses (combined) •    1/2 cup grated parmesan cheese •    1/4 cup white wine •    1/2 box spiral noodlesPreheat oven to 350 degrees.
Cook pasta according to directions. Strain and pour into a foil baking pan. Add 1/2 of pesto and set aside.
In a large pan, heat oil on medium. Season cubed chicken with salt and pepper, then place into the heated pan. Cook chicken til light brown, add the remaining pesto, wine and broccolini. Cover and cook until broccolini is sauteed. 

Pour chicken and broccolini over pasta. Pour in parmesan cheese and mix evenly. Add the mozzarella/provolone on top of mix and bake for 20 min.
